If you follow me on Facebook or Twitter, you may have noticed my increasingly panicked posts about my CSA. See, I live right next to this amazing local grocery store, Smucker Farms. Back in spring I signed up for their 26-week CSA. It's a great deal; I get a box of delicious farm food every week for what amounts to basically $25 a week.
The only thing is that... it's a lot of food. Like, a LOT of food. Like, I occasionally start to freak out about the amount of food spread across my giant dining room table. I AM ONLY ONE PERSON, WORLD!
Anyways, I usually manage to muddle through. Mostly by roasting and sauteeing everything, and then eating it for a week. But once in a while, I'm a bit more particular. So when I found myself faced with pints and pints of snap peas, I searched the web for recipe inspiration, and came across this: Thai Chicken Soup.
I don't really know what I was thinking making hot soup in June in DC, but other than that this soup turned out pretty awesome. Luckily (?) for you, Instagram introduced its video feature the same day I made this soup, so I videogrammed it for you. Unfortunately, I don't think you can embed the videos, but if you're dying to see my edited genius, head over here.
